Our culinary team, led by Chefs Juan and Jorge, brings heart, skill, and mindful intention to every dish, ensuring that what’s on the plate supports both body and mind.
Cooking as Connection
For both chefs, food is a bridge to connection, to comfort, and to cherished memories.
Chef Jorge explains, “Cooking here is about creating a nurturing space for healing, connection, and restoring mind and body through mindful nourishment.”
Chef Juan adds, “Food creates connection, it can transport you back to a childhood memory, offer comfort, and inspire new, healthier habits.”
This philosophy comes alive daily in our kitchen, where the chefs weave functional medicine principles into their menus: anti-inflammatory ingredients like fresh fish, turmeric, ginger, berries, and leafy greens; omega-3s from walnuts and chia seeds to support the nervous system; and vibrant vegetables to nourish from the inside out.
Workshops that Inspire
Our Monthly Cooking Workshop is one of our highly anticipated activities. In the inaugural sessions, Chef Jorge demonstrated the art of homemade dressings, simple, fresh, and free from the preservatives often found in store-bought varieties.
Chef Juan brought his own twist with a Blackberry Vinaigrette, teaching the science of emulsification and inspiring clients to take ownership of what they put on their plates.
Clients didn’t just watch, they asked questions, took notes, and helped prepare recipes, discovering the joy in making something both delicious and healthy.
Recipes with Heart
Some dishes hold special meaning for our chefs. For Chef Jorge, it’s Shrimp Ceviche, a refreshing summer dish passed down from his Mexican family traditions. With its bright lime and lemon base, fresh cilantro, and optional Serrano peppers, it’s as nourishing as it is flavorful, rich in vitamin C and antioxidants.
For Chef Juan, a good piece of homemade sourdough bread with butter brings unmatched comfort, reminding him of the sensory magic food can hold.
The Healing Power of Food
From Chef Juan’s avoidance of inflammatory oils and heavy creams to Chef Jorge’s emphasis on nutrient-dense, mood-boosting meals, every choice in the kitchen is intentional. These menus are designed to support trauma recovery, pain recovery, and emotional regulation, helping clients feel grounded, energized, and cared for.
And while each chef brings a unique culinary style, Chef Jorge with his vibrant flavors and deep cultural roots, Chef Juan with his sustainable, from-scratch techniques, they share the same goal: to nourish the body, awaken the senses, and be part of each client’s path to recovery.
